Pumpkin Spice & Everything Nice

Embrace the flavors of fall and honor your body with nutrition by making yourself this pumpkin spice yogurt bowl. Canned unsweetened pumpkin is mixed with plain yogurt, pumpkin spice, and maple syrup, and topped with berries, chia seeds, and muesli for a nutrient-packed meal that sustains your energy for hours to come.

Ingredients

  • 3/4 cup plain Greek yogurt (I like Siggi’s brand)
  • 1/4 cup canned unsweetened pumpkin
  • 1/2 tablespoon maple syrup
  • 1/2 tablespoon ground pumpkin spice, or ground cinnamon and clove
  • 1/2 cup mixed berries, or any fruit you like
  • 1/2 cup muesli or granola 
  • 1 tablespoon chia seeds

Step by Step Instructions

Step 1

In a bowl mix together yogurt, pumpkin, spices, and maple syrup until well combined. Taste and adjust flavors to your liking. 

Step 2 (optional)

If using muesli: in a saute pan, lightly toast your muesli in a bit of coconut or olive oil. Stir frequently so not to burn. Remove from pan and let cool completley to allow to crisp up.

Step 3

Top yogurt with fruit, muesli or granola, and chia seeds. Enjoy!
