Crack ‘em, Chew ‘em, Love ‘em, Leave ‘em. That’s the Pistachio Principle and it’s so easy to follow. Initially, I may have overanalyzed what to pair with these pistachios because at the end of it all, I realized that just about anything pairs wonderfully with this tasty green nut. I took a Mediterranean approach to give myself another reason to chow down on olives and cheese.

Marinated or Pickled Vegetables – I chose kalamata and sun-dried tomato stuffed olives, peppadew peppers, mushrooms and artichokes. You can find these at your grocery store olive bar or jarred in the vegetable section. Most specialty grocery stores have them too. I love how the pistachios balance out the vinegar flavor of these vegetables.

Farmstead Goat Cheese – Creamy goat cheese spread atop crusty grain bread. Simple and full of flavor.

Scrimshaw Pilsner – This California craft Pilsner paired beautifully with these California Pistachios. It’s got a very subtle hoppiness with a crisp, clean finish to cleanse the palate of the pungent olives and goat cheese.
