Avocados really light my fire and I don’t see these flames burning out anytime soon. What’s not to love about this unique fruit? It’s loaded with uber healthy monounsaturated fats that, when eaten with foods rich in Vitamin A, E, D and K, enhance the absorption of those fat-soluble nutrients. Their mild flavor and soft, silky texture make it easy to add to many dishes.

The avocado replaces heavy cream, giving it a complete lipid-healthy makeover. You could also puree avocado with a little lemon juice, water and honey for a healthier creamy salad dressing. Or simply throw some sliced avocados on toast for a quick and healthy breakfast. The Almighty Avocado photo showcases how I love to add avocado into a crab salad mixed with mango.
