My last avocado recipe was designed to hide the avocado flavor and instead let it’s creamy texture shine through in some decadent chocolate pudding.  This time, I’m letting the little fruit shine in every way possible in this simple salad made with lump crab meat, avocado, and mango.

In addition to their heart-healthy monounsaturated fats, avocados are packed with nutrients such as potassium, Vitamin A, folate, and magnesium just to name a few. Throw some chopped avocado over your eggs in the morning, on a salad for lunch or serve some guacamole during dinner – this fruit fits in all meals throughout the day.

 

Avocado Crab Salad

Serves 4

3 cups lump crab meat

2 avocados, chopped

1.5 cups mango, chopped

1/4 cup red onion, chopped

2 teaspoons cayenne pepper

1/4 cup lime juice

Salt and pepper

Additional slices for garnish (optional)

– In a small bowl, combine crab with 1/2 of the lime juice, cayenne pepper and a dash of salt and pepper. Set aside.

– In a different bowl, combine mango, avocado, remaining lime juice, onion and salt to taste. 

To Serve as Shown in Picture:

– Using a 1 cup measuring cup, fill 3/4 full with crab meat and press to pack in. Fill remaining space with avocado mixture and press to pack in. Flip measuring cup upside down on a plate and tap the top to release everything. Gently slide the measuring cup off to reveal your beautiful crab and avocado tower. 

Easy, No-Time Serving Method:

Just toss together 3/4 cup crab with 1/4  to a 1/2 cup of avocado mix and be done with it. 

 

I love the sweet, spicy and creamy combination of this dish. The sweetness of the mango and the creaminess of the avocado marries so well with the spicy crab meat. A great summer recipe and… these simple ingredients allow this dish to be prepared in under 30 minutes!
