Trying to surround yourself with healthier snacks? These little power bites take minutes to make and will healthfully satisfy a mid-day snack attack. They’re full of chocolate, fiber and healthy fats.
Did I mention they have chocolate?
Oh, and coconut? What’s not to love?
…Well, I suppose not everyone loves coconut. If you happen to be one of those with an aversion to coconut, leave it out. No harm no foul.
No-Bake Chocolate Coconut Power Bites
Makes ~20
1/2 cup dried fruit (use what you like – I used dates, prunes and apricots)
3 TBS oat bran (rolled oats work nicely too)
2 TBS peanut butter
3 TBS unsweetened coconut (plus extra for coating)
2 TBS ground flax seed
3 TBS unsweetened cocoa powder (or cacao)
1 TBS pure maple syrup

Thoroughly blend all ingredients in a food processor. This should form a pretty thick and sticky mixture.

Pinch off small amounts of “dough” and roll into bite-sized balls. Roll in coconut or extra cocoa powder.

Cover and refrigerate or keep at room temp. They should last up to 2 weeks in the refrigerator.
